Lymphoid tissue within our body can present in two forms , diffuse in every tissue in the form of small number of cells" lymphoid follicles" and aggregations like in Palatine Tonsils, Peyer's patches in small intestine and so on.
The function of lymphoid tissue anywhere is providing immunity because It consist of T and B lymphocytes. T lymphocytes are responsible for Cell mediated immunity , while B lymphocytes are responsible for Humoral Immunity, also known as Antibody mediated immunity. That's why when you get infected via oral route your palatine tonsils are enlarged. That's why there are some people against removal of tonsils unless so necessary because it provides first line of defense against infections having oral cavity as portal of entry.
