Tonsils act as a part of immune system and protect against pharyngeal and upper respiratory infections.
There is a medical controversy regarding the removal of frequently infecting and diseased tonsils. ENT specialists favor for its removal while pediatricians are against tonsillectomy.

Tonsils are composed of lymphoid tissue that trap bacteria and viruses entering through the throat and produce antibodies to help fight infections.
Removing them does not change the voice.
After tonsillectomy you can get a sore throat for a week or two when your voice might sound different. After that, back to normal and no more tonsillitis.
