Is this tonsillitis or worse?I always have throat problems, every month, I've recently had bad tonsillitis and pharyngitis.
The back of my throat is all red, really bad pain when I swallow ( I wince everytime I swallow and am not eating because of it) and I can feel the back of my throat when I talk.

You need to see a doctor so that s/he can have a look, check your glands etc. It could be a bacterial infection, in which case you may need antibiotics, or it may be a virus, in which case time and painkillers will work. Another condition that can cause a sore throat is "post-nasal drip" where catarrh from the back of the nose drips into your throat and causes pain and inflammation. Drink plenty of liquids, don't lie flat and it will get better in its own time.
